Ingredients
- 500g bread flour
- 10g instant yeast
- Pinch of salt
- Pinch of sugar
- Warm water (approximately 300ml)
- Melted butter for brushing the dough
- Dried herbs (optional)
- Biltong, thinly sliced or shredded
- Grated cheddar cheese
Method
- In a large mixing bowl, combine the bread flour, instant yeast, salt, and sugar.
- Gradually add warm water to the dry ingredients while stirring with a wooden spoon until it forms into a sticky dough.
- Transfer the dough onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
- Place the dough back in the mixing bowl and cover with plastic wrap or a damp cloth. Allow it to rise in a warm place for approximately an hour or until doubled in size.
- Preheat your oven to around 180°C/350°F/Gas Mark 4.
- Once risen, punch down on the dough gently to release any air bubbles.
- Roll out the dough into a rectangle shape on a lightly floured surface, about 1cm thick.
- Spread melted butter over the rolled-out dough, leaving an inch border all around so that when you roll up the dough, the filling doesn’t spill out.
- Sprinkle dried herbs (optional) evenly over the melted butter layer for added flavour and aroma.
- Layer biltong slices or shredded biltong across one side of the rectangular dough. Then sprinkle grated cheddar cheese generously over the top of biltong slices or shredded biltong.
- Roll up the stuffed dough tight from one side towards the other like a jelly-roll or Swiss roll.
- Place the rolled-up bread into a greased loaf pan with the seam side facing down. Cover again and leave it to proof for another 30 minutes until double in size.
- Bake for 25-35 minutes, then remove from the oven. Brush melted butter all over the bread top and sides. Return to the lower rack in the middle position, then continue cooking for another sixty-five minutes until done.

What is Biltong and Cheese Bread?
Biltong and cheese bread is a delicious South African snack that combines two beloved ingredients – biltong, a type of dried meat, and cheddar cheese. This unique combination creates a flavourful bread that is perfect for any occasion.
Biltong itself holds great significance in South African cuisine. It originated from the need to preserve meat during long journeys or hunting trips in the early days of colonisation. The process involves curing strips of beef with salt, spices, vinegar, and sometimes sugar before air-drying it until it becomes firm but still tender.
When incorporated into bread dough along with grated cheddar cheese, biltong adds an intense savoury flavour profile while providing texture throughout each bite. The result is a moist loaf bursting with rich flavours that are sure to satisfy your taste buds.
The addition of biltong not only enhances the overall taste but also provides additional protein content to this already hearty treat. Paired with melted butter or enjoyed on its own as part of game day snacks or braai (barbecue) menus – there’s no doubt why this delightful creation has become so popular among South Africans.
Whether you’re hosting friends for an afternoon gathering or simply looking for something different to enjoy at home, give biltong and cheese bread a try! Its distinct flavours will transport you straight back to sunny skies over vast landscapes where traditional recipes like these have been cherished through generations.
Why Biltong and Cheese Bread is Popular in South Africa
Biltong and cheese bread has become a beloved snack in South Africa, particularly during rugby braais (barbecues) or as game day treats. This unique combination of flavours brings together two iconic ingredients – biltong and cheddar cheese – resulting in a deliciously savoury treat that satisfies the taste buds.
The Love for Biltong
One reason for its popularity is the love affair that South Africans have with biltong. Biltong is a traditional dried meat delicacy made from various types of cured meats such as beef, ostrich, or venison. It’s marinated with spices like coriander seeds, salt, pepper, vinegar or Worcestershire sauce before being air-dried to perfection. The result? A tender yet chewy texture bursting with rich umami flavour.
A Perfect Blend of Textures and Tastes
When combined with grated cheddar cheese inside freshly baked bread dough, it creates an irresistible blend of textures and tastes – softness from the bread contrasting against the slightly firm bite of biltong pieces while melted cheesy goodness oozes out upon each slice.
Versatility for Any Occasion
Another reason why this dish has gained immense popularity lies within its versatility. Whether enjoyed on its own as an appetizer at social gatherings or paired alongside other dishes at barbecues (“braais”), biltong and cheese bread is a crowd-pleaser that can be enjoyed in various settings.

Recipe 3: Quick Biltong and Cheese Loaf
Ingredients:
- 500g bread flour
- 10g instant yeast
- Pinch of salt
- 1 tablespoon sugar
- Warm water (approximately 300ml)
- Melted butter, for brushing the loaf tin and topping the dough before baking
- Dried herbs (optional)
- Approximately 150g biltong, thinly sliced or shredded
- Approximately 200g grated cheddar cheese
Directions:
- In a large mixing bowl, combine the bread flour, instant yeast, pinch of salt, and sugar.
- Gradually add warm water to form a soft dough. Start with about half of the suggested amount and adjust as needed until you achieve a smooth consistency that is not too sticky.
- Knead the dough on a lightly floured surface for approximately five minutes or until it becomes elastic and springs back when pressed with your finger.
- Place the kneaded dough in an oiled bowl; cover it with cling wrap or damp cloth. Allow it to rise in a warm place for about one hour or until doubled in size.
- Preheat your oven to 180°C (350°F). Grease a standard-sized loaf tin with melted butter thoroughly so that the baked loaf does not stick to the tin after baking. Set aside for later use.
- Once risen, punch down the dough to get rid of any air bubbles. Divide it into two equal portions. Roll out one portion into a rectangle shape on a lightly floured surface. The rectangle should be slightly smaller than your prepared loaf tin.
- Brush melted butter over the rolled-out dough. Sprinkle half the sliced biltong evenly over the entire surface. Then sprinkle half of the grated cheddar cheese on top of the biltong slices.
- Starting from one end, roll up the dough tightly like a Swiss roll. Place it in the greased loaf tin with the seam side down. Repeat the process with the second portion of dough and remaining biltong and sliced cheddar.
- Cover the loaf tin loosely with cling wrap or damp cloth and allow it to rise for another 30 minutes.
- Once risen, bake in the preheated oven for approximately 40-45 minutes or until golden brown on top. The bread should sound hollow when tapped on its bottom. Remove from the oven and brush melted butter over the top of each loaf. Allow it to cool slightly before removing from tin.
Serving Suggestions:
This quick biltong and cheese loaf is best enjoyed fresh out of the oven when it’s still warm. Serve slices as part of your braai (barbecue) spread alongside other South African favourites such as boerewors, sosaties, or grilled vegetables.
